MARGARET’S SEAFOOD SALAD

This seafood salad is a BBQ party hit. It always tastes better when Doug makes it for some reason, which isn’t all bad because then I don’t have to do the cookin’!

  • 3/4 pkg. salad macaroni (tubetti)
  • 1-2 cans of crabmeat (depending¬† on how much you like the people you’re making it for), drained
  • 1-2 cans medium shrimp, drained-you can also use fresh or frozen
  • 1 medium jar of stuffed green olives with juice, thinly sliced
  • 10 hard boiled eggs, chopped
  • 1/2 white onion, chopped
  • fresh lemon juice to taste
  • mayonnaise to taste

Cook the macaroni and let it drain until all the liquid has evaporated otherwise  your salad will be runny. Add the crab, the shrimp, the olives, the eggs and the onion to the macaroni and mix. Add the mayonnaise until the salad is creamy and moist. Squeeze the fresh lemon juice into the salad to taste. Add pepper if desired.
