HALIBUT CHEZ MOOERS

We particularly like to grill fish as we think that it adds a nice flavor to fish. This sauce recipe is not exclusively  for halibut. You can use it for any light flavored fish: sole, whitefish, orange roughy, swordfish  etc. The sauce can also be used when baking the fish in the oven or when you put it under the broiler.

  • 1/4 cup olive oil
  • 2 tsp. oregano
  • Juice of 2 lemons
  • Salt and pepper to taste

Blend and shake all the sauce ingredients. Generously, baste the fish before placing it on the grill on both sides. Continue basting until fish is nice and white, generally, 5 minutes per side depending on the thickness of the fish. Be sure that your coals are grey or your fish will stick to the grill.

In the oven; I usually bake filets of fish for 15 minutes in a well buttered, glass pan, at 350 degrees. Of course, to make it a little more fattening, might as well serve it with some drawn butter.
